Baked Fish and Spinach Roll
I thought we might try something different and post a recipe. This is a recipe that I came up with after looking through several different baked fish dishes. I combined some and modified it to fit the ingredients I had on hand. I have made it with tilapia and swai. Any thin whitefish fillet should work. It is easy to make and comes together quickly. I usually just make up recipes as I go, so writing it all down is new for me.
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 tsp Mrs Dash
- 2 fillets - Tilapia, Swai or any whitefish
- 2 wedges Laughing Cow Blu Cheese or favorite flavor
- 2 tbsp margarine
- ¼ cup bread crumbs
- Pre-heat oven to 350 degrees.
- Sauté spinach and Mrs Dash in olive oil until wilted.
- Remove from heat and mix with softened cheese.
- Take spoonful of filling and spread on defrosted fillet.
- Roll fillet starting with small end and secure with toothpick.
- Roll in bread crumbs.
- Place pats of margarine on fillets and in the bottom of baking dish.
- Bake at 350 for 30 mins.
Winter Weariness
We thought you might enjoy a little “sick of snow and winter” humor. I took Frankie outside yesterday to take pictures of him in his new coat. He loves to be outside, but I don’t think he really liked the snow. We do have a groundhog that lives in our woods, so I could just imagine Frankie wanting to get his “paws” on him!
Winter Weariness
I’m looking out my window and I can’t believe my eyes
It’s snowing once again but I shouldn’t be surprised
This is the longest winter I think I’ve ever seen
With record setting temperatures; snow and freezing rain
The first snow was pretty but we’re all tired of the fluff
I think that after several weeks we’ve all had enough
My brother called from Florida to tell what he had done
Seems he had been playing golf and gotten too much sun
I don’t want to hear about his fun and his reddish glow
He’s complaining about a sunburn while our temp says 10 below
I let my dog out in the yard; his leg froze in mid-air
If I hadn’t rescued him, he still be frozen there
This winter is lasting much too long I’m ready for some fun
I may have move in with my brother to get a little sun.

Winter Snow
Yet another snowy day! I think we are all really getting tired of winter, but there is beauty in the cold and snow. Here is one of Mom’s poems and some of my photos from this winter.
Winter Snow
I sit gazing out my window on a cold and wintry day
The vivid autumn colors now replaced by shades of gray
The rain is beginning and it’s starting now to freeze
A coat of ice is covering the deck, the yard, the trees
This world looks so beautiful as if encased in glass
The scene has turned to crystal, each limb, each blade of grass
The snow begins falling and coats the world in white
Trees cradling these fluffy clouds, what a lovely sight
Boughs are now so heavy; they’re bending to the ground
The world now is silent as the snow comes drifting down
God’s turned the gray of winter into a land pristine and new
Only He could paint a scene with such a lovely view
