Baked Fish and Spinach Roll

I thought we might try something different and post a recipe. This is a recipe that I came up with after looking through several different baked fish dishes. I combined some and modified it to fit the ingredients I had on hand. I have made it with tilapia and swai. Any thin whitefish fillet should work. It is easy to make and comes together quickly. I usually just make up recipes as I go, so writing it all down is new for me.

Baked Fish and Spinach Roll

Serves: 1 or 2
Ingredients
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 1 tsp Mrs Dash
  • 2 fillets - Tilapia, Swai or any whitefish
  • 2 wedges Laughing Cow Blu Cheese or favorite flavor
  • 2 tbsp margarine
  • ¼ cup bread crumbs
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Sauté spinach and Mrs Dash in olive oil until wilted.
  3. Remove from heat and mix with softened cheese.
  4. Take spoonful of filling and spread on defrosted fillet.
  5. Roll fillet starting with small end and secure with toothpick.
  6. Roll in bread crumbs.
  7. Place pats of margarine on fillets and in the bottom of baking dish.
  8. Bake at 350 for 30 mins.
